When the cherries are ripe, afraid of heavy rain and strong winds, the fallen cherries will rot quickly, and there is no other way out except throw them away. Traditional cherry drying method
Due to the short ripening period of cherries, they are concentrated on the market and cannot be stored well, which limits their sales and large-scale production and planting. The traditional drying method needs to be dried in the open air. They are easily contaminated by dust and flies. The temperature and humidity of the drying cannot be controlled. If it is rainy, it is very likely to cause the dried fruit to become moldy.

Cherry processing steps
1. Pick cherries
Choose the varieties with bright skin color, short stalk, small nucleus, uniform fruit size, sweet taste, and small juice. Remove mildew and immature fruits, then remove the stalks, put them in a basket and wash them with running water 2-3 times in a sink or basin , Remove impurities, remove the stalk by hand;
2. Soak alkali rinse
In order to shorten the drying time, it is best to blanch the cherries in 0.2-0.3% boiling lye for a while, then rinse them in clean water to remove the lye, and then put them in the basket for 5-10 minutes to drain the water;
3. Cherry drying process
Step 1. Set the temperature to 60°C and wait for the cherries to drain some water.
Step 2: Set the temperature to 65-70°C, and set the time to 12-15 hours.
The moisture content of dried cherries can be controlled at about 18%.
4.Drying and softening: The sugar content of cherries directly determines the temperature setting of the cherries in the later stage, so the fruit trays with different sugar content should choose the appropriate later temperature, and the later drying and consolidation stage adopts the method of lowering the temperature, and the temperature is controlled at 58 ℃ is enough, in order to achieve the water balance inside and outside the fruit, the texture is soft, after drying, pour the dried cherries into a wooden box and let them soften for 2-3 days.
5. Grading and packaging after drying
According to the quality requirements, it is divided into two levels, the first level is dark red, and the second level is dark red with light red. Please pay attention to clear the inclusions, and then pack them in food bags according to the level and then put them into the carton. The quality standard color is dark red and light red, the smell is delicate, the meat is smooth, not crispy and mildew.
